Why are Wellspring students so successful at maintaining or continuing weight loss when they return home? One reason is that Wellspring teaches students to prepare many of the same delicious low-fat, low-density meals, snacks, and desserts they have enjoyed at Wellspring.
Students return home with simple cooking techniques for preparing foods like stir-fry (without oil), muffins (without butter), brownies (fat-free), and more. Parents often tell us that the entire family benefits from the student showing off his or her skills in the kitchen once the summer is over!
Integrated Nutrition Education
Wellspring's nutrition education programme trains students on what they actually need to know about weight loss and weight control, then gives them hands-on experience using the information in their daily lives. Students visit supermarkets to find Wellspring-friendly substitutes to their favourite meals and snacks, eat out at restaurants to analyze menus and learn how to request low-fat cooking methods when ordering, and become self-sufficient in the kitchen through practice preparing ingredients, following and writing recipes, and utilising low-fat cooking methods.

- Deciding when a diet does and does not have a scientific basis
- Science of weight gain: why is it so easy to gain and so hard to lose?
- What science shows us about weight loss
- What science tells us about successful long-term weight control
- What are fad teen diets and why they don't work
- Ways to stay satisfied while continuing to lose weight
- Ordering out at restaurants
- Appropriate portion sizes
- Grocery store training: games and exercises at the market so that students know what to look for and buy when at home
- Proper kitchen sanitation
- Chopping and dicing techniques
- Following recipes
- Baking, grilling, dry sautéing, and other low-fat cooking methods
- Writing and altering recipes to make them Wellspring-friendly
